With the busy school year starting, it's time to get out those quick and easy dinner recipes. I came up with a low carb chicken cordon bleu casserole using convenient ingredients from Tyson Foods!
It took me less than thirty minutes to bake and prepare this delicious casserole that looks and tastes like a gourmet meal.
This meal prep chicken recipe is perfect to make for your family as the summer winds down and school activities begin to take over. This is a very easy recipe to throw together without having to think much about it.
If you are a really busy parent – or even a busy adult with jobs and other responsibilities – this meal is exactly what you need. There isn't a lot of measuring or food prep necessary.

What Is Cordon Bleu?
Traditionally, cordon blue is chicken wrapped around cheese or with a cheese filling. Then, it's breaded and fried.
I took the classic flavors of cordon bleu – chicken, ham, and swiss – and combined them into an easy casserole that will feed your entire family. I even incorporated the "fried" part of the traditional dish by using pork rinds.

Ingredients Used In This Cordon Bleu Casserole
To cut prep time, I used one package of Hillshire Farm® Farm Classics® Black Forest Ham Lunchmeat along with one bag of Tyson® Grilled & Ready® Pulled Chicken. I bought both products at a local Walmart Supercenter.
The ham was located in the open refrigerated section with all the other lunchmeat products. The chicken was with the other frozen chicken products in an upright freezer. I love that the meat is precooked which saves time in the kitchen when making this low carb chicken cordon bleu casserole.

For this recipe, I mixed cream cheese with mayonnaise and heavy cream first. Then, I added in some spices and parmesan cheese. Next, I stirred in ham, swiss cheese, frozen chicken, and chicken broth.
It's that simple.
What Sized Casserole Dish Do I Need?
Once everything was well blended, I just spread it out into a 9×13-inch casserole dish. Honestly, you can probably use any size of dish that you have in your cabinets.
Since the meat is already pre-cooked, you are basically heating it up so the cheeses all melt together. This will work no matter what size of dish you use.
What Is A Keto-Friendly Way To Add A Crunchy Topping For Casseroles?
I opted to top off the casserole with crushed pork rinds. You could use seasoned pork rinds if you already have some made. I find that storing crushed pork rinds in the freezer is not only convenient, but it also eliminates a lot of the pork taste.

How Long Does This Keto Casserole Take To Cook?
Since the meat is precooked, it should only take 20-25 minutes for the chicken cordon bleu casserole to heat fully and begin to brown. With less than 30 minutes from start to finish, you won't be stressing to feed your family during the busy back to school season.
Is This A Good Meal For Picky Eaters?
My husband loves both ham and chicken. He's a picky eater and hard to please. But, he was willing to give this low carb chicken cordon bleu casserole a try. I knew he would love it and he did eat it up without complaining.
Since this was a meal that my husband really enjoyed, I'll be making it often. I have a hard time finding things that he likes to eat other than plain meats, pizza, and burgers. He's not a low carb eater so when I find a dish low in carbs that he eats, I make it a regular.

- ¼ cup mayonnaise
- ¼ cup heavy cream
- 8 ounces cream cheese softened
- ¼ cup Parmesan cheese
- ½ teaspoon garlic powder
- dash fresh ground pepper
